Restaurant of the week: 70-year-old veteran chef opens Otto’s Deli Fresh / 本周餐厅:走进邻里的味蕾享受

Otto’s Deli Fresh,这是在新加坡威斯汀酒店(现费尔蒙酒店)担任厨房总监26年的70岁的瑞士厨师Otto Webel开设的人生中属于自己的第一间餐厅。《ICON风华》走进这间位于荷兰道(Holland Avenue)的休闲餐馆,品尝来自这40多年厨房经验老手的美味料理。

出生于瑞士的Otto Weibel在1973年首次来到新加坡担任香格里拉大酒店Tiara Supper Club(现已停业)的副主厨。三年后,他被调到了马尼拉的菲律宾广场威斯汀酒店,还于1980年帮助在香港开设九龙香格里拉大酒店。1985年,他回到新加坡,加入当时的威斯汀酒店(现新加坡费尔蒙酒店),担任厨房总监,这一做便是26年。

他一直关心年轻厨师的培养,他在2008年至2015年间担任美食界奥林匹克博古斯世界烹饪大赛(Bocuse d’Or)的新加坡及亚太地区主席,目前也是它亚太地区的荣誉主席。他与澳大利亚名厨Scott Webster联合创办了餐饮咨询公司OttScott。

从事餐饮业数十年,他获得过诸多殊荣。2001年,他获得了世界美食峰会所颁发的“终身成就奖”,和瑞士Gualt Millau的Urs Heller颁发的“年度瑞士厨师”奖。尽管他管理五星酒店厨房这么多年,主厨Otto却更希望走进邻里、亲近家庭的舒适享受,这也就是为什么他在荷兰村的商场开设了这样一间休闲餐厅Otto’s Deli Fresh。

这里提供全天候的餐饮,并由主厨Otto精心挑选高质量的熟食,从日本的牛肉、澳大利亚的羊肉再到新西兰的生蚝,种类不算很多,但却都是精品。尽管是休闲餐厅,但每道给你的第一印象都是精致的,是厨师用心准备的。这里真正掌勺的厨师是原登布西山专门供应高级肉类的烧烤餐厅Portico Prime的主厨Rick Chow。

印象最深的就是牛肉,不管是牛肉意面(Beef stroganoff fettuccine),还是和牛(Limestone ridge full blood wagyu beef rump),牛肉的肥瘦和熟度都是那么的恰到好处,既能感受到牛肉原有的鲜嫩多汁,又能品尝到不同菜品中的不同口感与味道。意大利宽面很有嚼劲,与烤腹肉牛排、焦糖洋葱、嫩黄瓜一起炖,再加上白蘑菇,味道很棒。来自澳洲的全血和牛臀肉,用盐调味,烤至显色,然后在烘箱中烘干。与牛排一起上的是自制的烧烤调味酱,但建议可以先单独品尝牛肉,感受它原有的味道再决定要不要沾酱。

这里的猪肉汉堡(Pulled pork burger served with fries and condiments)绝对不是你所以为的快餐,猪颊肉以80度的温度慢慢烹饪五小时,再用碎猪肉放在自制的烧烤酱中,搭配加入蛋黄酱与柚子汁的柚子卷心菜沙拉、自家腌制的日本黄瓜和火箭叶。

餐厅注重饮食的平衡,除了丰盛的肉类菜品,简单的蘑菇汤(Button mushroom soup with toasted brioche)和清淡的沙拉(Burratina Roquette Salad)亦能做得非常出众。味道独特而出众的浓汤,带有蘑菇的清香鲜美,尽管简单,却让人很享受。布拉塔奶酪意大利芝麻菜沙拉不单只有奶酪和菜,火腿的咸味、樱桃番茄酱的酸辣味、noisette香醋的酸味与焦糖固态牛奶的味道,丰富多彩并让人很容易就喜欢上它。

这里的饮料除了非酒精类和茶水,啤酒、红白葡萄酒和香槟的选择都比较多,配上肉类或海鲜菜肴,绝对是美妙的体验。
