由三星米其林名厨Jean-Georges Vongerichten坐镇的The Dempsey Cookhouse & Bar在今年2月开张。最近,餐厅正式开始供应午餐,并增添了全新的菜肴。《ICON风华》带你体验美味午餐。

Jean-Georges可谓是对亚洲美食了如指掌,在上海、香港、东京都开设有餐厅的他,总是受到亚洲传统美食的启发,这次将自己的餐厅开到新加坡,菜肴也是受到了不少东南亚美食的影响。The Dempsey Cookhouse & Bar延续每间Jean-Georges餐厅的DNA,菜肴注重烹饪创新与精致的风格。

Como Dempsey的三间餐厅都在同一建筑内,风格统一却又各自不同。The Dempsey Cookhouse & Bar占用建筑左边几乎一半的面积,可以容纳160人同时用餐,其中还包括两个包间以及室外台阶的桌椅。

尽管刚刚开始供应午餐不久,餐厅就已经有许多客人。白天餐厅显得格外宽敞明亮,看着窗外的阳光,更添好心情。午餐菜单与晚餐差异并不是很大,餐厅还有两道菜肴或三道菜肴的午餐套餐可供选择。不管是午餐还是晚餐,必尝的当然还是鱼子酱。

同样用鱼子酱和蛋黄制作的鸡蛋鱼子酱(Egg Caviar)与烤蛋黄与鱼子酱配草药(Toasted Egg Yolk and Caviar with Herbs)却是不同的风味,与众多高级餐厅一样都是选用来自中国浙江千岛湖的鱼子酱,一个是偏于简单纯粹的口感,而另一个的味道则更加丰富。

尽管是前菜,可是鹅肝(Roasted Foie Gras, Lychee, Black Olive, Rose)的分量一点都不亚于主菜。其实除了荔枝的酱汁,鹅肝一旁的果肉则是龙眼,将这些食材创意地搭配在一起,甜与咸的味道交织,非常特别的感受。而另一道蟹肉面包片(Crab Crostini and Lemon Aioli)是餐厅全新的菜肴,清爽的口感像是受到了东南亚传统美食的启发,是我当天最喜欢的菜肴之一。

另一道受到东南亚美食启发的则是烤鳕鱼(Roasted Cod, Broccoli Rabe, Spicy Herbal Coconut Broth)。鳕鱼的味道依然是干净纯粹,配上菜苗,挤一点青柠汁再浇上辣草药椰子汤汁,微辣而清新的味道像是泰国料理中的绿咖喱,即便是将鳕鱼和菜苗都吃完了,也忍不住喝上几口绿色的汤汁,尤其是在酷热的中午,甚至有消暑的功效。

当然也不能错过Jean-Georges的招牌芝士汉堡(Cheeseburger with Brie, Black Truf­e Mayonnaise)与热巧克力香草冰淇淋(Warm Chocolate Cake Vanilla Ice Cream),浓郁强烈的味道与之前几道菜又是不同的风格。

午餐在周一至周五的12点开始供应,周末还有早午餐。
