本地名厨Sam Leong今年迎来入行30周年并获颁“终身成就荣誉奖,为了纪念这重要里程碑,他在中餐厅Forest森推出全新菜单,每道料理背后都有特别的故事和意义。

融合多种风味的这道芒果芥末虾球(Crispy Wasabi Mayonnaise Prawn with Mango Salsa)不仅是Sam Leong的招牌菜,更让他扬名国际。1989年,他在泰国曼谷Novotel酒店的Lok Wah Hin掌厨时,第一次尝试在中式料理中加入日本食材。他突发奇想在虾球涂上一层芥末蛋黄酱,再舀一小口新鲜芒果入口,结果发现微呛又酸甜的口感其实挺美味。外脆内软的虾球配上味道浓郁丰富的芥末蛋黄酱,一口咬下去满满都是幸福。这道料理对Sam Leong还有更一层深的意义:他与太太Forest就是在他当时任职的那家餐馆认识,那时候她还是一名学徒。直到如今,Sam Leong发明的芒果芥末球仍非常受欢迎,是许多中餐厅菜单上常见的菜肴。

香茅糯米鸡卷(Pan-seared Lemongrass Chicken Roll stuffed with Glutinous Rice)是Sam Leong与太太在一起后共同创造的第一道料理,可以说是两人“爱的结晶”。Sam Leong和Forest分别擅长中式和泰式料理,因为对彼此的爱与尊重,两人决定研发一道融合中泰精髓的新菜式。

英国伊丽莎白女王在2006年到访新加坡时曾在富丽敦酒店用餐,她当时要求说想吃简单而健康的鱼料理。当时负责料理的Sam Leong于是决定用清鸡汤烹调本地常见的笋壳鱼,完全不加任何酱油或豆豉油,味道清淡可口,且能够保留住鱼原有的鲜甜。让他印象深刻的是英女王吃完后的评语:“那鱼就像豆腐一样软嫩”。他当时感到开心的同时又松了一口气。

“Ah Sam”秘制鲍鱼蟹肉面线(Braised Ah Sam Abalone Mee Sua with Sri Lanka Crab Meat in Superior Chicken Stock)是梁主厨版本的台湾面线。他每次到台湾都一定会到知名阿宗面线报到,甚至还深受启发,创造出这道鲍鱼蟹肉面线。面线汤以排骨、鸭肉和鸡肉慢火熬煮6小时制成,最后的半小时改以大火滚煮,让汤汁充分吸收各种食材的精华并且呈现浓稠的口感。用料多实在、诚意满满来形容这道料理最适合不过。现年54岁的Sam Leong在2012年创立Forest森,眼看餐厅已建立了名声,他也开始思考未来的方向。他说:“如果有天我退休了,应该会在熟食中心开设摊位,就卖这一道蟹肉面线!”

本地名厨Sam Leong(梁兆基)早前获“世界名厨峰会”(World Gourmet Summit)颁发终身成就荣誉奖(Lifetime Achievement Award),今年也是他入行第30周年,为了纪念这个里程碑,Sam Leong特别在中餐厅森(Forest)推出“I Am Sam”菜单,里头包括他以往曾推出或尝试的菜肴,每一道料理背后都诉说这他的人生故事。食客除了能品尝到Sam Leong的拿手好菜,还能从中了解这位名厨30年来的烹饪历程。
